The wine

Intense colored red with balanced violet tones, with a lot of volume and a long finish. Memories of ripe red fruit and very fine and pleasant tannins, the result of its time in the barrel. The grape is harvested when it has reached the optimum point of phenolic maturation. Fermentation carried out in stainless steel tanks at a controlled temperature between 25ºC and 28ºC. Twelve months in American oak barrels with a medium-high toast, followed by six months in the bottle.

It stands out for its intense aromas of red and black fruit jam (blackberry, strawberry, raspberry), very well integrated with balsamic, vanilla and roasted notes provided by the wood. On the palate it presents firm and round tannins that denote an accomplished maturity. Flavors of red fruit in jam and marmalade stand out, with toasted notes of coffee cream and cocoa. A great rebellious Rioja, balanced, with a lot of volume and a long finish.

We fry the steaks.
Cut the onion into julienne strips, and fry in the pan where we have made the loin. When it begins to take color, add the sliced mushrooms; Let the onion and mushrooms cook until they are well browned. Add the chicken broth that we will have previously very hot and the pieces of loin that we had reserved. We leave 15 minutes over low heat.
