Meet the faces behind the wine
Bodegas Canopy is located in the town of Camarena, 40 kilometers from Toledo and 70 from Madrid. This makes it a comfortable winery to visit in Toledo and near Madrid.
It is a young winery dedicated to the rediscovery of the historic terroir of Méntrida. In 2004 Belarmino Fernández and Alfonso Chacón, two friends oenologists, professionals from the world of wine, business and hospitality decided to unite their passion in this viticultural project that revives the quality of wine in Méntrida.
The journey of Bodegas Canopy began in November 2003, when its managers began the search for vineyards on which to base the project. The three partners were looking for old Grenache vines and modern Syrah plantations to think about the wines from the vineyard, practicing organic viticulture and respecting the grape to the maximum. The objective was none other than to make wines like the ones they liked to drink. Finally, it was in Méntrida that they found an old vineyard that suited their needs.

Our Test
As you can imagine, after getting to know them a bit, we loved their project… and when we tasted their wines it was a total match! We did not think about it and we launched our questionnaire, so that they were well portrayed and better know the faces behind these vinazos.
1.- What do you like the most about everyday life in your winery?
The wonderful transformation of the grape from the vineyard through its production and ending with aging is a passionate story.
2.- Guilty Pleasure - A wine that you always have on hand (from another winery)
A champagne, Pierre Gimonet special club. An extraordinary champagne with great complexity, balanced, but at the same time delicate and fresh. It is one of the essentials for a celebration!
3.- If your winery were representative of a traditional festival / festival, what would it be?
San Juan, full of magic and love.
4.- If you could choose any famous / historical person to represent the winery, which one would you choose?
David Livingstone, because he is an intrepid, adventurous and daring character.
5.- If you could have one super power, what would it be?
Teleport to the future and thus be able to know the wines over time.

The wine
In the mouth it is surprising how fresh it is, prompting a second glass. It has good acidity and a friendly structure, soft and pleasant tannins. Chocolate notes. Cheerful wine with a persistent aftertaste with a tasty finish.
Wine Personality Test

The ideal character for Castillo de Belarfonso would be "The little prince", because it is a fun and playful wine
2. What if it were an animal? Why?
The animal that best represents our Castle of Belarfonso is the hummingbird, sophisticated and at the same time delicate, of great beauty.
3. The reason for the label and the name.
Castillo de Belarfonso was born from the union between the names of Belarmino and Alfonso (The creators of Canopy). With their bouncy castle they want to represent the winery's most carefree and fun style. Making a nod to French tradition, they numbered all the bottles in the production but with the same number 214.
4. Your match. What would be your perfect companion?
Castillo de Belarfonso's perfect companion is the person you want to meet.
5. Is it more beach or more mountain? Why?
Castillo de Belarfonso is a versatile wine for both beach and mountain, due to its subtle and elegant fresh sensations.
Match your moment
The migas from La Mancha are ideal to accompany Castillo de Belarfonso, its balanced acidity red fruits minerality magnify this dish.
Ingredients
500 gr of Spanish bread
250 ml of water
8 cloves of garlic
200 g of fresh chorizo
4 slices of fresh bacon
1 chorizo pepper
extra virgin olive oil

parsley
Elaboration
Cut the bread into cubes and place it in a bowl. Add a little salt to the water and pour over the bread. Wrap them in a white cloth, turning the cloth from time to time so that the moisture is better distributed. Let it sit for at least 2 hours in the refrigerator.
Cut the bacon into small cubes and fry them in a pan with a little oil. When it is browned, add the chorizo cut into slices. Remove the stem and seeds from the chorizo, chop and add until toasted. Drain.
Add a little clean oil to the pan, add the whole and peeled garlic cloves and brown them a little. Add the crumbs (moistened) and stir constantly with a spoon or shovel until they are loose and golden brown.
Add the chorizo and the bacon. Mix everything well until the chorizo and bacon are heated through. Mash the chorizo pepper and add. Mix well and serve. Garnish with parsley.
