Meet the faces behind the wine

Bodegas Canopy is located in the town of Camarena, 40 kilometers from Toledo and 70 from Madrid. This makes it a comfortable winery to visit in Toledo and near Madrid.

It is a young winery dedicated to the rediscovery of the historic terroir of Méntrida. In 2004 Belarmino Fernández and Alfonso Chacón, two friends oenologists, professionals from the world of wine, business and hospitality decided to unite their passion in this viticultural project that revives the quality of wine in Méntrida.

The journey of Bodegas Canopy began in November 2003, when its managers began the search for vineyards on which to base the project. The three partners were looking for old Grenache vines and modern Syrah plantations to think about the wines from the vineyard, practicing organic viticulture and respecting the grape to the maximum. The objective was none other than to make wines like the ones they liked to drink. Finally, it was in Méntrida that they found an old vineyard that suited their needs.

ONE LAND, TWO FRIENDS, ONE PASSION

The wine

The wines from Bodegas Canopy are unique wines, both for the extreme care of the vineyard, for the peculiarity of the plots, and for the special way of making and raising them.

In 2018, Bodegas Canopy launches Ganadero Blanco, a young, non-aged wine, 90% Macabeo, 5% Garnacha Blanca and 5% Verdejo. This complex and elegant white, with strong personality and character, is made with bunches from 25-year-old vines that thrive at an altitude of 400 meters in Camarena (Toledo).

The funniest part of Bodegas Canopy is concentrated in these bottles. This winery practices sustainable viticulture, minimally interventionist. This allows the sandy soils to fully express themselves and achieve the power and uniqueness of this wine.

Wine Personality Test

We have asked them their vision of wine and they have answered the personality questionnaire, in which the wine is portrayed to perfection:

1. If wine were a famous / fictional character, what would it be? Why?

The ideal character for Ganadero Blanco is Rosalía, since she is a vibrant and groundbreaking wine. Always with the freshness that characterizes this great singer!

2. What if it were an animal? Why?

The animal that best represents our White Rancher is a cow, since it represents the freshness of nature.

3. The reason for the label and the name.

We were looking for a dynamic label, in which we combine the tradition of the countryside with the more sophisticated urban version.

4. Your match. What would be your perfect companion?

The perfect match for Ganadero Blanco would be a sailboat ride.

5. Is it more beach or more mountain? Why?

It's more like a beach! Because it's the most refreshing and salty, drinking it will transport you to the sea.

Match your moment

Atascaburras are a typical Toledano dish, in which its base of potato cooked with cod and paprika from the vera combine perfectly with our refreshing Blanco rancher.

Ingredients

1 kg of potatoes
2 eggs
2 cloves of garlic
shall
400 gr desalted cod
12 walnuts
extra virgin olive oil
parsley

Elaboration

Wash the potatoes and cook them in a saucepan with water for 30 minutes. Season. Place the eggs in another saucepan with water and salt and cook for 10 minutes. Put water to heat in another casserole, add the cod and cook for 5 minutes. Reserve the cod water.

Peel and mince the garlic finely. Peel the potatoes and chop them. Peel the eggs and cut them into quarters. Crack the walnuts and set them aside.

Mash the garlic in a mortar. Place them in a bowl. Add the potatoes and continue mashing. Add the crumbled cod and mix well. Pour in a little oil while stirring. If you see that it is very thick, add a little of the broth resulting from cooking the cod (it has to be like a puree).

Serve the mixture in 4 clay pots. Garnish with the half walnuts and egg pieces. Add a parsley leaf.
