After a long family tradition of 7 generations of winegrowers, the grape they were selling, who worked with so much affection to obtain something completely different from the usual, had achieved a reputation in their environment that positioned their vineyards as benchmarks in the area.

All their wines are of an artisan and exclusive character, for this reason our elaboration is totally careful, always being clear that most of it takes place in the vineyard, and in the winery, only a job that began the previous year in the winery is finished. country.

1. What do you like the most about everyday life in your winery?

Stroll through the vineyard and take care of the vines. The winery is only a second home to transform a product that is already prefabricated in the vineyard.

2. Guilty pleasure - a wine that you always have on hand (from another winery)

Sorrasca. It is a personal bet to bring an external variety from another area to the farm. This variety is perfectly adapted to our area due to the altitude at which the farm is located. Being at 1000 meters of altitude, we have very sunny days and very cold nights. This allows the vine to finish its phenolic maturation, and maintain a high natural acidity.

3. If your winery were representative of a party, what holiday would it be?

San Isidro and San Isidrín, since in this festivity the farmers are celebrated. For our winery, the vineyard is the most important thing.

4. If you could choose any famous / historical person to represent the winery, which one would you choose?

Rafa Nadal, for the love we have for him in the winery. He is a person, who is not only my idol, but is also a magnificent representative of the values of any Spaniard with whom we feel identified. I would like to do, one day, a wine project together with him.

5. If you could have one super power, what would it be?

Fly, to be able to fly over the vineyards, our territory, and discover a new world.

6. In which non-winemaking publication (magazine / blog) would you like to be published?

In the New York Times, it would be "milk" !!!

The wine

Like the Finca Dominio de Casalta de Almansa where the Pinot Noit is grown with which this tasty and wide rosé is made, which a couple of months of aging in French oak barrels suits it very well to enhance all its nuances. Irresistible, seductive and elegant, it perfectly synthesizes all the virtues of the Denomination of Origin through its captivating aromas of white fruits like pear and banana, and red like ripe strawberries on a biscuit background that makes it even more sweet. Almansa, irresistible.

1. If wine were a famous / fictional character, what would it be? Why?

Cayetano Rivera This wine, like Cayetano Rivera, is elegant, agile, attractive and with a great body. Cayetano has the disposition and the ability to stand in front of a bull and develop in front of it, in a perfect synchronic symphony of sets and passes, as well as this wine when it is taken with a good piece of meat.

2. What if it were an animal? Why?

A flamenco. The colors of the pumas of this animal are similar to those of the red and black fruits of the forest, such as strawberries and blackberries, which this wine contributes in its aroma and taste. This wine, like flamingos, is wild due to its tannic content from Syrah. At the same time it is elegant and fine cut with polished and silky tannins, made with great delicacy. It is exotic, extravagant and striking like these birds, for being such a different wine.

3. The reason for the label and the name.

The name of Jumenta comes from a plot that we have in the Finca de Casalta. Around this plot we have the vineyards to make this wine. Jumento means donkey in old Castilian Spanish and a jumenta means a donkey. Formerly the Jumentas were used to plow the land and do field work. The label has a flamenco because in DO Almansa, very close to our farm, are the Pétrola lagoons. These lagoons are very saline and flat, a very attractive habitat for flamingos, making it the second most important migratory point in Europe.

4. Your match. What would be your perfect companion?

Barbecue.

5. Is it more beach or more mountain? Why?

Mountain, since when drinking this wine demands cheeses, mushrooms, meat, and above all because it has a UMAMI note.

Match your moment

This rice should be dry, so you have to control the level of liquid during cooking. It is better to add if we see what it takes to avoid overdoing it. Ideal to accompany this vinazo.

Country rice with meat:

Ingredients (6 people):

200 g boneless and chopped chicken
2 cups of round rice or bomba (about 350 g)
200 g of pork tenderloin cubes
3 cups of chicken broth (may require more)
1 ripe red peeled tomato
A green or red bell pepper
4 cloves of garlic
1 glass of good fragrant stew wine
A bay leaf
1 teaspoon of paprika
Thyme, rosemary, oregano or any aromatic herb to your liking (better if they are fresh
Extra virgin olive oil, salt and pepper

Elaboration:

Chop the pepper and sauté it in oil in a saucepan. Add the sliced garlic and when they take color, add the paprika and immediately add the chopped tomato and bay leaf.

When the tomato reduces a little, add the meat and seal it well on all sides. Season with salt and pepper and add the herbs and wine. When it reduces the alcohol we cover and let it cook until the meat is tender.

We add the rice and we give a few turns. Add the broth and let the rice cook over low heat until it reaches its point.

Let stand 10 minutes before serving.
