The wine
The Macabeo comes from vines between 25 and 35 years old, while the Garnacha Blanca comes from vines between 10 and 50 years old. All are grown at 400m in the Mas de Cabrera vineyards, in Gandesa. The soils in Mas de Cabrera are rich in limestone with very little organic matter. All the vines are dry-grown. After a hot and dry summer, the grapes were harvested during the first week of September.
The winery
"Alimara" in Catalan means "lighthouse". So, with "alimara" we mean the fire beacons that were placed on the top of the mountains to be able to give a quick warning between cities and towns. We thought that a lighthouse was a good example of how we wanted to be seen, noting the quality, which is increasing, and the variety that emerges from this fascinating land. This same idea is reflected in the names of our wines.

Pair your moment:
We cut a couple of potatoes into thin slices, and put them on a tray suitable for the oven with a little oil.
Let it cook in the oven at 180º, about 10 minutes.
Clean the fish (and if you want, fillet it, but you can leave it whole, it will still be good) remove the potatoes from the oven, cut a tomato and add it to the potato tray, season, and add a little rosemary or bay leaf. Place the fish on top, a splash of white wine and in the oven for another 20 minutes.
