The wine

Made with the Sauvignon Blanc variety. The grape is harvested at night and cold macerated to preserve its aromas and extract the potential, subtlety and delicacy of the variety. After the batonage is when "Old Hands" reaches its fullness to be bottled.

In the still glass, the primary aromas appear, which remind us of white flowers. Once we shake the wine, the exotic fruit notes are manifested with delicate aromas that remind us of a Mediterranean wine.

On the palate, the wine is intense, fresh, with great volume. It has a smooth finish, which invites us to continue enjoying this great white wine.

Match your moment

To make a good beef carpaccio, the quality of the meat is essential. That is why we are going to use a very fresh beef tenderloin, without a drop of fat. We are going to propose the most basic recipe, with a citronette sauce, which is a vinaigrette where the vinegar is replaced with the lemon. Ideal to accompany this vinazo.

Grilled vegetables:

Ingredients:

1 zucchini
8 green asparagus
1 red bell pepper
2 basil leaves
A few strips of chives
Vinegar
Pepper
1 aubergine
1 green bell pepper
2 tomatoes
1 sprig of thyme
Extra virgin olive oil
Shall

Elaboration:

Heat the iron well. Clean the vegetables and cut the aubergine into sticks, the peppers into strips, the asparagus removing the lower part of the stem and the zucchini into slices.

Put a little oil on the grill, place the seasoned vegetables and cook them on both sides for 6-8 minutes.

Peel the tomatoes and dice them. Put them on the iron until done. Transfer them to a bowl, pour a good stream of oil and ground pepper. Add the chopped basil leaves, the thyme leaves and the chopped chives. Add a splash of vinegar and mix well.

Serve the vegetables in a large bowl and dress with the tomato vinaigrette. Sprinkle with some Maldon salt.
