On the border with the Alicante region are the Wrongo Dongo vineyards distributed in several plots, surrounded by mountains at an altitude of 650-700 meters. Cup grown between 1977 – 1987. Limestone soils, poor in organic matter, with good drainage on the surface, but with great water retention capacity as we go deeper.

We fry the fillets.
Cut the onion in julienne, and fry in the pan where we have made the loin. When it begins to take on color, add the sliced mushrooms; let cook until both the onion and the mushrooms are well browned. Add the chicken broth that we will have previously very hot and the pieces of loin that we had reserved. We leave 15 minutes on low heat.
