1. What do you like the most about day to day in your winery?

Walk through the vineyard and take care of the vines. The winery is only a second home to transform a product that comes already prefabricated in the vineyard.

Sorrasca. It is a personal commitment to bring an external variety from another area to the farm. This variety is perfectly adapted to our area due to the altitude at which the farm is located. Being at an altitude of 1,000 meters, we have very sunny days and very cold nights. This allows the vine to finish its phenolic ripening, and maintain a high natural acidity.

3. If your winery represented a party, what would it be?

San Isidro and San Isidrín, since farmers are celebrated on this festivity. For our winery, the vineyard is the most important thing.

4. If you could choose any famous / historical person to represent the winery, which one would you choose?

Rafa Nadal, for the love we have for him in the winery. He is a person who is not only my idol, but is also a magnificent representative of the values ​​of any Spaniard with whom we feel identified. I would like to do a wine project together with him one day.

5. If you could have a superpower, what would it be?

Fly, to be able to fly over the vineyards, our territory, and discover a new world.

6. In which non-oenological publication (magazine/blog) would you like to be published?

In the New York Times, it would be “the milk”!!!

The wine

Chardonnay monovarietal made with grapes from the Dominio de Casalta estate, at more than 1,000 meters above sea level. Clear nose, with notes of white fruit and a dry mouthfeel. Long finish with a citrus touch.

1. If wine were a famous / fictional character, who would it be? Why?

Julia Child. This wine, like Julia Child, has a lot of personality and character while remaining elegant. Both are bold and strong while still being delicate. This white wine is a wine that also makes a lot of reference to French gastronomy, as well as the recipes that this excellent Chef cooked, since it is fermented in French oak barrels like Burgundy wines.

2. And if it were an animal? Why?

An owl- Just as this animal is considered a long-lived and wise animal, this wine is a wine for aging. Like owls, this wine is also carnivorous. It goes well with both fish and white and red meat. The owl has long wings, as long as the end of this wine, which allows it to fly for a long time. The golden hue of the feathers resembles that of wine.

3. The reason for the label and the name.

The label has a flock of flamingos because in the DO Almansa, very close to our farm, are the Pétrola lagoons. These lagoons are very saline and flat, a very attractive habitat for flamingos, making it the second most important migratory point in Europe.

The name refers to the Bodega, Rodríguez de Vera, and the type of grape with which it is made (Chardonnay).

As the winery tells us, a good match would be a delicious fried ripe plantain, so here we indicate how to make this delicious dish to accompany this great wine:

Ingredients:

2 ripe bananas

oil for frying

Optional: fresh cheese or quesillo if you can't find fresh cheese or quesillo you can use feta cheese if you want a salty cheese or grated cheese like mozzarella or another that melts well.

Elaboration:

Peel the plantains and cut them, the best way to cut them is to make diagonal cuts, not very thick, they can also be cut into long pieces but sometimes it is easier to cook them when they are not very big.

Heat the oil over medium heat in a skillet, add the plantains when the oil is hot.

Ripe plantains cook very quickly, it is important to turn them so that they do not burn, ideally they should be golden brown on both sides.

Serve the plantains hot, if you are going to add the feta simply sprinkle it on top of the plantains and you're done. If you are going to use grated cheese then add the grated cheese when they are done but still in the pan, removing it from the heat to avoid burning and let the cheese melt.
